Morning Glory Muffins

Ingredients

2 cups flour

2 tsps cinnamon

2 tsps baking soda

1/2 teaspoon salt

1 1/2 cups sugar

1 1/2 cups finely shredded carrots

2 lg tart apples peeled & shredded

1/2 cup raisins

1/2 cup choped nuts optional

3 eggs lightly beaten

1 cup vegetable oil

2 teaspoon vanilla

1/2 cup flaked coconut

Directions

Sift flour, cinnamon, soda & salt. Stir in sugar. Add carrots, apples, raisins, nuts until blended. Pour in remaining ingredients all at once. Stir just until moist. Spoon into greased muffin tins -- at least 3/4 full.
Bake 15-18 minutes at 350. Serve warm.
